ALMOND PASTE

200 gr of almond

180 gr sugar

20 gr honey

60 gr white egg

Lemon and orange zest

Reduce the almonds to powder with sugar, add the honey, the white egg and the lemon zest.

Put it in the sac a poche and give the sahape you like.

Let the 24 hours pastries rest in a refrigerator before to bake.

Bake in  the already hot oven at 180° for 10 minutes

they must not be colored.

let it cool well
