TUNA FISH WITH EGGPLANT CREAM AND SALADE WITH ORANGE AND ONION CARAMELIZED

Serve 4

1 EGG PLANT

MINT

1 table spoon of orange juice

Orange zest ( half table spoon )

LEMON JUICE

2 ORANGES 

1 ONION

2 table spoons of brown sugar

150ml  of water

50ml of vinegar

SALT AND PEPPER

 

 

PUT THE EGGPLANT IN TO THE OVEN AND COOK UNTIL SOFT AT 180°

PEEL THE ORANGE

CUT THE ONION IN A SLIDE AND COOK WITH VINEGAR AND WATER, ADD BROWN SUGAR UNTIL CARAMELIZED.

TAKE THE PULP OG THE EGGPLANT AND WHISK WITH ORANGE JUICE AND ONE TEASPOON OF LEMON,MINT,OIL AND SALT.

GRILL THE TUNAFISH WITH SESAMO, OIL IN A HOT-PLATE.

SERVE WITH CREAM OF EGGPLANT, TUNA FISH AND ORANGE SALADE WITH ONION.
